I don’t have to cook (much) on Thanksgiving as we dine with best of friends! They make the turkeys and start us off with some sides. Everyone else, and there are a lot of us, make sides to share!
But I realize that not everyone is as lucky as me, so with that in mind I have expanded on last year’s Thanksgiving Day recipes so that you can find just the right ones for you and yours this year!
So what constitutes a “FRITTER?” Before I lived a low-carb lifestyle I have to admit when I thought fritter I thought rich and gooey apple fritters… decadent dough laden with apples and deep fried in oil!

If you are like me you love using spaghetti squash instead of pasta in lots of low-carb recipes… but are you as impatient as I am? While I like to bake it in the oven or cook it in a crockpot I don’t always decide to serve spaghetti squash an hour or even 4 hours ahead of time! In those instances I opt for the microwave method! I love my neighbor Tim that lives down the street! LOL, seriously I do! He plants the most wonderful garden every year that many moons ago he dubbed the “Marge Burkell Memorial Garden.” Sounds like I’m deceased! LOL!

Sharon calls them Spaghetti Squash Hash Browns, I think of them as “potato” cakes… but no matter what you call them they are delicious!
