I never tasted or even knew what fennel was before we visited Italy. Now we absolutely love it! It is a large bulb that I add raw to my salads any time I can find it in the store! It tastes mildly of black licorice and adds a wonderful crunch. I have taken to leaving celery out every time I can put fennel in! BUT I had never considered grilling, roasting or otherwise cooking fennel until a local eatery we love posted a picture of their current special and featured caramelized fennel as the centerpiece of the dish!
