BRRRR!!! The weather forecasters are predicting colder than normal temperatures for most of the country later this week! For most of us that signals the start of comfort food! What better (and easier) way to make it than by pulling out your slow cooker or crock pot; whatever you call yours!
I have a big 6-qt one that I love! It’s big enough for when all the family come for dinner, a party or traveling to friends’ homes. Since it is equipped with a snap down lid I never worry about messes when transporting it hot! Mine has the temperature probe but to be honest I don’t bother with it much. The model without is just as nice.
So… I am cracking to get cooking! With ALL these slow cooker recipes I am sure you will find some that fit the bill for your family too!
I attended a library event last year that featured Kendra Bailey Morris who is a great slow cooker chef and author of “The Southern Slow Cooker.” I was happy to learn how to use my slow cooker more efficiently, how and when to tent, add seasoning, how high to comfortably fill, etc. Her book contains all that too. While not a low carb cookbook I have adapted many of her delicious recipes to fit our lifestyle. For instance, in her video-recipe below I subbed an artificial sweetener for the sugar and served it over cauli-rice! You can pick up her book in either paper or digital and most libraries have a copy too!
You can also always pick up some free to low-cost Kindle eBooks that are all about low carb slow cooking!
