BRRRR!!! The weather forecasters are predicting colder than normal temperatures for most of the country later this week! For most of us that signals the start of comfort food! What better (and easier) way to make it than by pulling out your slow cooker or crock pot; whatever you call yours!
I have a big 6-qt one that I love! It’s big enough for when all the family come for dinner, a party or traveling to friends’ homes. Since it is equipped with a snap down lid I never worry about messes when transporting it hot! Mine has the temperature probe but to be honest I don’t bother with it much. The model without is just as nice.
So… I am cracking to get cooking! With ALL these slow cooker recipes I am sure you will find some that fit the bill for your family too!
I attended a library event last year that featured Kendra Bailey Morris who is a great slow cooker chef and author of “The Southern Slow Cooker.” I was happy to learn how to use my slow cooker more efficiently, how and when to tent, add seasoning, how high to comfortably fill, etc. Her book contains all that too. While not a low carb cookbook I have adapted many of her delicious recipes to fit our lifestyle. For instance, in her video-recipe below I subbed an artificial sweetener for the sugar and served it over cauli-rice! You can pick up her book in either paper or digital and most libraries have a copy too!
You can also always pick up some free to low-cost Kindle eBooks that are all about low carb slow cooking! Here’s a link that will give you the current selection sorted low to high for your convenience. Remember you do NOT have to own a Kindle to read and use Kindle ebooks! I don’t own one! Get their FREE app for just about any mobile device or PC using the link in the left-hand sidebar or HERE.

If you would rather have the low carb work and conversions done for you you are in the right place! So…on with the “show!”
1. Buffalo Chicken
This Buffalo Chicken recipe is a great for making low-carb wraps for yourself even if the rest of your family uses buns! I personally leave the carrots out and use green onions or shallots to cut the carb count even more and love wrapping it in soft bib lettuce!
If you would rather use “the other white meat” then Carnitas may be just what you would like! Made with pork they make great football game fare!
3. Chicken Bacon Chowder
If soup talks to you when I say comfort food than this Chicken Bacon Chowder will sing!
4. Slow Cooker Jerk Chicken
5. Frittata with Kale, Roasted Red Pepper, and Feta
If you follow me you know that I published my frittata recipe last week. Have youever thought to make one in a slow cooker? Well Kalyn did and here is her Frittata with Kale, Roasted Red Pepper, and Feta recipe!
6. Chicken Pad Thai with Veggie Noodles
7. Cheater’s Pork Stew
Yep, that’s a picture of “my” slow cooker in the article! It’s a great crockpot! This savory Cheater’s Pork Stew cooks up fast and easy in it. The Sunny Paris spice they refer to is available through the mother of all spice companies as far as I am concerned, Penzey Spices.
8. Italian Zucchini Meatloaf
Nothing says comfort in our home like meatloaf. It can be tricky finding a good one that stays low carb AND can be made in a slow cooker too! This Italian Zucchini Meatloaf recipe does BOTH!
9. Sausage Stuffed Peppers
Does your husband drool over stuffed peppers too? While most call for rice this one uses cauli-rice! If you aren’t into spicy these Sausage Stuffed Peppers can be made with ground beef too!
10. Cheesy Meatball Soup
Sometimes I need to feed a whole bunch of people, some low carb and some not. This Cheesy Meatball Soup fits the bill for both!
11. Bacon and Cheese Crock Pot Quiche
Whether you make this in a crockpot or bake it quickly in the oven this Bacon and Cheese Crock Pot Quiche is sure to be delicious!
