My friend and new neighbor Joanne brought these simple and easy appetizers to our party Sunday! You can throw together these together in a flash anytime if you have the ingredients on hand!
- Claussen Kosher Dill Mini Pickles
- Cream Cheese; softened
- Armour Star Dried Beef
- Slather one slice of dried beef with a coating of softened full-fat cream cheese.
- Wrap dried beef, cream cheese side in, around one kosher dill mini pickle.
- Cut wrapped pickle in half and secure with a toothpick.
- VOILA! You're DONE!
These are low carb but don’t pig out! Figure one net carb in each pickle and there is only 4.3 net carbs in a whole 2.25 ounce jar of the dried beef. One tablespoon of cream cheese is 0.6 net carbs so it’s going to depend on how thick you “slather” as to how many carbs each of your roll ups is going to be.
Not something you are going to want to eat all night because each half is probably going to figure out to be about one net carb. But I will tell you what… you are not going to get the chance to graze for long anyway because as you can SEE they all but FLY off the serving tray! That was in less than 5 minutes after Tom and Joanne walked in the door! The saltiness is GREAT with low-carb beer and definitely with a spiced rum and coke!
