Cinco de Mayo is coming up soon so I wanted to get this big certified low-carb delicious Mexican recipe roundup ready and published so that you have time to peruse them all and shop for the ingredients in time!
When we are lucky enough (read that as finding a great deal!) to travel to Mexico we stay on the eastern side of the country, opposite Cozumel on the mainland in an area known as the Mayan Riviera. The people who live there are Mayan descendants, not technically Mexican so their food can sometimes vary from traditional Mexican. But who cares? I love Mayan, Mexican and Tex Mex too! I am not a snob when it comes to “Mexican” foods and enjoy a wide variety, I just like what I like!
BUT when it comes to Mexican it can get pretty carb-laden if you aren’t careful. I have been known to “smuggle” low-carb soft flour tortillas into my favorite Mexican restaurant (shhhh!!! don’t tell!) and usually substitute a great (ceviche topped if available) salad for the inevitable rice or refried beans that usually accompanies their meals as sides. My biggest tease are the tortilla chips with cheese or salsa they all serve before the meal… grrrrr.
