...Certified Low-Carb Delicious!
I admit it, I am an Italian-food junkie. When dining out at a local Sicilian restaurant I absolutely love I have been know to order their homemade lasagna because I can pretty much eat around the noodles because they are so big. BUT look at what I prefer to make at home! Low-carb noodleless (is that even a word?) lasagna that is so delicious everyone enjoys it as much as the regular, maybe MORE!

One “secret” to having this turn out really well is to make sure that you grill the zucchini (or eggplant for that matter, it works too) planks before incorporating them into your dish. If you don’t do that they tend to “weep” and make the lasagna watery. But other than that you can follow the Skinnytaste recipe.
One other word of caution, if you decide you would rather substitute a prepared marinara sauce be sure to check the carb count before buying. I was just at Trader Joe’s yesterday and even there their sauces have gone up in carbohydrates.
I bought the Trader Giotto’s Rustico Tradition Southern Italian Sauce; it is only 4 net carbs per 1/2 cup serving. If you aren’t careful you can easily end up with one that is pretty high in carbs so be sure to double check. I do to this day because I cannot remember every sauce carb count and when they change up their recipes they can also change up the count!
So what’s your favorite secret ingredient for lasagna? Mine is making huge meatballs that I then slice into a layer; that keeps my lasagna firmer and it holds together better for cutting and serving!
