Best Low-Carb Weight Loss Soup Recipes

We’re coming down to the wire! My SOUPER Super Bowl party will be here before I know it! I have at least 6 crock pots of soup coming for our Super Bowl buffet and each one will be as wonderful and noteworthy as my friends that will make them! We all love finding and making new soups so I thought I would share just some of them with you.  

Healthy Cream of Mushroom Soup Recipe

We start off with the wonderful Cream of Mushroom soup that Carol always brings. It is requested every single year!  Simple to make it is a wonder that anyone ever opens a can of cream of mushroom! Once you taste this you will wonder that too! The only time I ever use canned cream of mushroom is when it is specifically called for in a recipe and even then I try to substitute bouillon laced heavy whipping cream for it instead. It reduces carbs and adds so much more taste!  

Michael Symon's Spicy Tomato and Blue Cheese Soup Recipe

The second soup is one my husband Michael will love! He is a a blue cheese kinda guy, me not so much, but we’ve been married 35+ years because we have learned to compromise. With a variety of soups he can have his favorites too. We both love watching Michael Symon on The Food Network (who can resist that laugh?) so I am confident that his Spicy Tomato and Blue Cheese Soup is sure to be a winner!  

Mellissa's Jalapeno Popper Soup Recipe

MY Michael really lucks out as the next soup is another one he will absolutely love as he loves spicy and Mellissa of I Breathe I’m Hungry’s Jalapeno Popper Soup is certainly that!  The combination of bacon (you can NEVER go wrong with bacon) 3 cheeses and peppers makes this a soup that will heat you up inside and out at any occasion, party or not.  

Carolyn's Chicken Chipotle Chowder is a feast  for the eyes AND the palate!

When I get to select what type of peppers grace my soup bowl I tend to pick chipotle over jalapeno.  I love their slightly smokey flavor and the kick without the bite.  Lucky for me Carolyn Ketchum at All Day I Dream About Food really does dream about food and is always coming up with wonderful low-carb recipes I love! Cauliflower Leek soup is a nice change from potato soup!

We find ourselves eating a lot more cauliflower lately as it often takes the place of potatoes in many recipes. That goes for soup recipes too! Here we have a recipe shared on AllRecipes.com that does just that.  Their Cauliflower Leek soup has a great pureed cream base. You can control how much or how little of the actual cauliflower gets left in chunks as you use your stick blender.

Iowa Girl's Bacon Cheddar Cauliflower Soup sure looks yummy!

Rounding out our 6 low-carb soup recipes is another soup that uses cauliflower instead of potatoes but is more in the loaded baked potato soup category.  Iowa Girl of Yummly serves us up a big bowl of Bacon Cheddar Cauliflower Chowder and tops it off with all the fixings! The site is aptly named as this is certainly yummy!  

A number of the recipes call for you to puree the ingredients. While you can certainly go to the trouble of putting your hot soup in a blender I prefer to use a stick, or immersion blender right in the pan. Here’s a quick video that will show you how easy that is to do:
