Muffins in a minute. It’s a tasty treat that many following a low-carb way of eating enjoy. They are super simple to make and delicious without any guilt. There are as many flavors as there are cooks to improvise and develop recipes… or dieters experimenting…so let’s check some of them out!
We’ll start with a simple flax meal recipe. Flax meal has as much fiber as carbs so it adds zero net carbs to the finished treat. Flax meal muffins in a minute are great for breakfast as the flax gives them that type of flavor and texture. Here’s the basic recipe for any muffin in a minute or mug:
- 1 teaspoon butter
- ¼ cup flax meal
- ½ teaspoon baking powder
- 2 tsp Splenda
- 1 teaspoon cinnamon
- 1 egg
- Melt butter in microwave-friendly coffee mug
- Add dry ingredients
- Add egg
- Mix thoroughly
- Microwave 1 minute or until muffin is set.
From here you can add and subtract however you’d like. You can add pecans or almonds while staying low carb. Try chia seeds but avoid raisins or other high in sugar fruits unless you are prepared for the added carbs.
You can also vary the texture and taste by substituting some of the flax seed meal with almond flour. The more almond flour you add while taking away the flax the more cake-like the finished muffin will be but again, they will be slightly higher in net carbs as almond flour doesn’t have as much fiber as flax.
Let’s look at some more muffin-in-a-minute (sometimes called muffin in a mug since that’s what they can be microwaved in) recipes. They come in every flavor that any traditional muffin or cake!
Here’s a muffin in a mug that starts with the same basic recipe but the addition of spices turns “A Baker’s Weight Loss Journey’s” into gingerbread!
Also using flax (golden variety recommended for this one) is Gwen of “Gwen’s Nest” with her wonderful Lemon Poppy Seed Muffin in a Mug recipe!
Prefer blueberries over lemon? Not a problem! Lynnae McCoy of her blog by the same name has that one covered! These blueberry muffins in a mug will start off anyone’s day with a smile!
Karen of “Low Carb One Day At a Time” has a delicious variation in her Pumpkin Spice Muffin in a Minute recipe. This one is made with almond flour so it is going to have a finer texture and read more like cake. The addition of pumpkin puree will give it a delicious moist taste.
Some muffins in a minute/mug utilize baking mixes like Truvia Baking Blend to cut down on sugar and therefore carbs. I can’t find it locally so I order mine through the Netrition link above. I have found that Netrition has the absolute lowest prices for all the low-carb products I cannot find in my stores and with their low flat rate shipping they are just a no-brainer for me.
Jorge Cruise uses this blend in his chocolate Skinny Cake. He mixes up 4 at a time and cooks them in mugs in the microwave:
2 Minute Cake
1/4 cup Truvia Baking Blend
1/2 cup almond flour
3 tbsp unsweetened cocoa powder
1/8 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tbsp coconut oil
2 tbsp heavy whipping cream
Mix all ingredients together in a bowl until the mixture is even and smooth (no lumps).
Pour 1/4 of the mixture into a mug and microwave for 2 minutes.
Refrigerate remaining batter for later!
That’s the 1/2 dozen recipes I usually include in my articles… but since we strayed over to chocolate cake I thought I would go one more with muffin in a minute brownies! YES! Brownies! Who can resist and who says they can’t be for breakfast? This recipe from “Paleo Desserts” hits the mark. Add chopped pecans for crunch!
