...certified Low-Carb DELICIOUS!
I posted a picture of the certified low-carb delicious lemon poppyseed cupcake, aka muffin in a minute I was sharing with my husband Michael and many of you asked for the recipe… so here you go!
We love that I can throw this together in a minute or two and be eating dessert in a lot less than ten minutes! Closer to five! It’s great eaten alone with breakfast but I like to add a bit of low-carb ice cream and some sugar-free whipped cream. I like to keep the sugar-free Land O Lakes squirt can in the house just for such occasions! Think to add some sliced strawberries, blueberries or raspberries too!
- Non-stick spray
- 2 TBSP butter; melted
- 3 TBSP almond flour
- 1 tsp coconut flour
- 1 egg
- 1 packet Stevia
- 1 TBSP lemon juice
- 1 tsp baking powder
- ½ tsp poppyseeds
- Spray the inside of mug with non-stick.
- Melt butter in mug in microwave.
- Remove mug and add all remaining ingredients.
- Microwave on high approximately 2 minutes until set.
- Remove to plate(s) and serve as desired.
It’s a super easy to make dessert or brunch cupcake or muffin or whatever you want to call it! Even with the addition of the other ingredients I mentioned it is super low in carbs! So what are you waiting for? Got make some yourself!
