First things first! Be careful in de-seeding your jalapenos, especially if you are making a lot for appetizers!  Most of the heat is in the seeds and membranes, the juice from them will really sting your eyes if you rub them  after handling without gloved!  I personally use a grapefruit spoon to make the job simple and easy!
