There’s nothing better than a great cookie (or two) with a wonderful cup of coffee. There’s nothing to stop you from doing that while pursuing your low-carb way of eating. To that end I have rounded up a number of low-carb cookie recipes that are simple to make and easy to enjoy!
These recipes, as well as all low-carb recipes here on my site, are what I really consider low carb. That means you are not going to find a cookie that is more carbs than I will eat. If you want something that’s 1/2 dozen carbs per cookie you won’t find it. That would be 1/3 of what I consider the maximum net carbs for a full day when actively looking to lose weight. Will I eat a dessert that’s 6 net carbs? Yes, on occasion but it’s going to be a splurge. One that I will definitely follow up with my all-natural carb inhibitors! But you are not going to find that in any of these delicious cookies, so enjoy!
First off we have Low Carb Vanilla Latte Cookies so you’ve got coffee in your cookies to go with the fresh-brewed in your cup. It gains that flavor with instant coffee granules added to the batter. I am not a purist myself so I am not going to buy Kerrygold unsalted butter for cookies. I don’t even buy it to eat plain. I tried it, don’t feel it’s worth the added cost and use salted Land-O-Lakes for just about everything, including baking, in my house. But ingredient decisions are up to you.
I cannot talk about having cookies with coffee without adding a biscotti to the mix and this low-carb biscotti with cranberries and pistachios recipe sure fits the bill! Full of flavor but not carbs you can enjoy this recipe from Low Carb Diet Support without guilt. The cranberries add a bit of tartness while the pistachios add crunch.
Also from Low Carb Diet Support is another Italian favorite in their coffee shops. That’s the amaretti biscuits that are nice and crisp on the outside while being soft in texture inside. The distinctive amaretto taste is achieved with almond extract to keep this low carb so you get all the flavor without the guilt.
A Sweet Life features a Triple Chocolate Peppermint Biscotti recipe by Carolyn Ketchum of All Day I Dream About Food, as a guest post on their site that will set you to drooling if you favor these delicious flavors. At only 3 net carbs per chocolate covered biscotti you can count this one as a decadent dessert!
Back on her own site Carolyn of All Day I Dream About Food gives us a traditional favorite that features not as much chocolate but decadent nonetheless. Most know them as Peanut or Peanut Butter Blossoms, or peanut butter cookies with a kiss of chocolate perched on top.
Prefer just peanut butter? Of course you can make Carolyn’s Blossoms without the chocolate or you can check out this low-carb flourless peanut butter delight by Claire Robinson at The Food Network. Just be absolutely SURE to substitute an artificial sweetener (I used Splenda) for all that sugar! THAT will keep it low carb. I love the addition of the course salt!
