Low Carb Breakfast Pancakes

Few foods say breakfast more than pancakes! Yet many people are under the false impression that you cannot have pancakes on a low carb diet. Nothing could be further than the truth! Here’s a multitude of reasons why!  

While I tend to land on the side of being lazy I get away with it when it comes to pancakes and waffles if I have my stash of Carbquik in the house! LOL! Carbquik is the low-carb equivalent of Bisquik and is just as versatile! I absolutely LOVE it and you’ll see it featured in a few of my recipes like my biscuits and sausage gravy! When I make those I just follow the recipe on the back.

When I am not being lazy here are some of the pancake recipes I love to use:

Low Carb Breakfast Cream Cheese Pancakes

Mellissa from I Breathe I’m Hungry is famous for her delicious recipes. This is by far one of her easiest but it’s still a keeper. If you ask on any Facebook low-carb group you’ll find that this recipe is not unique. They all use one that is very similar or identical. I decided to feature Mellissa’s because in addition to being a phenomenal cook she is a great photographer! Try her Low-Carb Cream Cheese Pancakes today! They are quick, easy and DELICIOUS!  One note from me, and this is said universally about this type of recipe, be sure to let the pancakes really set up on the first side before flipping… they’ll still taste the same if they look messy on your plate, but they’re just not as pretty.  

Low Carb Breakfast Ricotta Pancakes

Emily of The Blue House Blog features ricotta instead of cream cheese and it adds a wonderful richness to the batter! Ricotta is the cheese you stuff cannoli with! Next up are two that you will find everywhere on low-carb groups. They are the standard coconut flour and almond flour pancakes that are the staple for flour type pancakes when pursuing the low carb way of eating. While they are similar I am giving you each so that you can print out which you prefer:

Low Carb Coconut Flour Pancakes
These coconut flour pancakes are a breakfast staple for anyone on a low carb diet.
Recipe type: Breakfast
Serves: 1
  • 3 TBSP coconut flour
  • 4 eggs
  • 3 TBSP butter
  • 3 TBSP milk
  • ¾ TBSP baking powder
  • ½ tsp salt
  • Low-Carb Sugar-Free sweetener to taste
  1. Mix all ingredients until just blended.
  2. Pour onto hot seasoned griddle or pan and cook on one side until bubbles form and pancake sets. Flip and finish browning second side.
  3. Serve with lots of butter and your favorite sugar-free pancake syrup.


Low Carb Breakfast - Pancakes
Almond flour gives you all the cakiness of traditional wheat flour pancakes without the carbs!
Recipe type: Breakfast
Serves: 2
  • ¾ cup almond flour
  • 2 large eggs
  • 1/ 8 cup water
  • 1 TBSP vanilla extract
  • ¼ tsp baking soda
  • ¼ tsp salt
  • Sugar-free sweetener to taste
  1. Mix all ingredients until just blended.
  2. Pour onto hot seasoned griddle or pan and cook on one side until bubbles form and pancake sets. Flip and finish browning second side.
  3. Serve with lots of butter and your favorite sugar-free pancake syrup.

This is a wonderfully orchestrated recipe that blends just the right amount of pumpkin and spices for a taste treat your family will be sure to ask for again and again! Serve these Pumpkin Coconut Flour pancakes  with lots of butter and drench with rich, slightly warm sugar-free pancake syrup and you’re going to gather compliments galore!

Last but certainly NOT least is my absolute FAVORITE kind of pancake! I call them German Dutch Baby Pancakes. Gwen of Gwen’s Nest just calls her’s German pancakes but whatever you call them they are second to none! Unlike some of the traditional recipes where you have to start it on the stove top and then move it to the oven Gwen’s recipe is easier, and you just POP it into the oven right off! For those not familiar with Dutch Baby Pancakes, they rise up while cooking but then they deflate on your plate. They are very rich, eggy and OMG delicious!  You can serve them with butter and sugar-free syrup or sugar-free preserves, but traditionally they are served with lemon butter! YUMMM!!!  You are definitely going to want to try these and make them often!
