Low-Carb Grilled Zucchini Rollups

Do you follow TheKitchn.com? Yeah I know it’s spelled wrong, but that’s the way they spell it! AND no matter how it’s spelled they have some absolutely GREAT recipes! Some of which are, like this one, wonderfully low carb! 

Low Carb Grilled Zucchini Rollups!


grilled zucchini rollup nutritionThe recipe calls for a delicious blend of herbs and ricotta cheese and is designated as an appetizer. It will make a great appetizer but I am having them for lunch! Without any marinara sauce because I don’t think they need it.

As you can see by the nutritional label I generated, if you use all fat ricotta and you get the 24 slices of zucchini (8 out of each of the 3 whole zucchinis) each rollup will only be 1 net carb apiece!

Want to lower your carbs more? skin the zucchini, although I like the edge it gives the finished look of the dish and they are easier to handle if you are serving them as finger food.  Note that they are not heavily grilled either which makes them fine for handling as an appetizer if forks aren’t on the menu.

By adjusting your mandoline you should be able to get nice thin slices of zucchini, which will give you the lowest carbs while giving you perfect looking and delicious rollups!
