Freezing herbs in olive oil

As a child I remember my mom not canning but rather freezing things like strawberry jam. My husband’s mom canned a lot but that is sadly just not my forte. I, like my mom, would prefer to freeze things when I can so I can enjoy them when out of season with minimum effort. Yep, that’s me!

So when I saw this simple way of preserving some of the herbs in my going-to-seed garden you see up there under my bottle tree I was all over it!

It’s not going to work with the more fragile herbs like basil or mint BUT it will work with my rosemary, (although here in Virginia it tends to stay useable most of the year – unless it gets so cold that it all gets blighted like last winter! I had to replant it all this year.) sage, thyme, and oregano. I think I am going to make some up with the straight up individual herbs in them and maybe even experiment and make some combos like mentioned in step #4!
