Easy Breakfast Egg Muffin Cups
 
Want a quick and easy breakfast that you can make once and eat all week? Then make these mini-frittata egg muffin cups! You can adjust the ingredients to include anything you'd put in an omelet!

Serves: 12
Ingredients
  • 12 eggs
  • ½ cup heavy whipping cream
  • Salt and Pepper to taste
  • 1 sweet red pepper, chopped
  • 2 handfuls spinach
  • ½ cup shredded cheddar cheese
Instructions
  1. Crack 12 eggs into a large bowl.
  2. Add ½ cup of milk, salt and pepper, and whisk until thoroughly mixed.
  3. Add 1 chopped red pepper, 2 large handfuls of spinach, and ½ cup shredded cheddar, and whisk again until the spinach wilts.
  4. Pour mixture evenly into a greased muffin tin and bake for 20 minutes at 375 degrees fahrenheit.
  5. Makes 12 muffins.

I adapted this this from recipe by BuzzFeed Food to be lower in carbs, you can make it your own by adding any ingredient you’d add to an omelet! Bacon, sausage, onion, seafood, etc! Just be sure to adjust your net carbs whenever you do.  It’s all good and so simple to throw in the microwave as you run out the door!  They’ll stay a multitude of days in the fridge so you can cook once and eat all week!

Of course you can make these easy egg muffin cups in a regular muffin or cupcake pan. Just be sure to spray well with a non-stick so they come out whole. I tend to like using a silicone muffin pan so I don’t have to spray and they pop out clean every time! I even have some individual ones that are heart shaped that my grandkids love but I am looking at ordering these adorable flower silicone molds right now! Won’t they make cute muffins in a minute too?  I just have to have them!
