Shrimp and Zoodles Ingredients

Super Simple Shrimp and Zoodles
This shrimp and zoodles recipe is short on prep and long on flavors!
Serves: 2 Entrees or 4 Sidedishes
  • 12 raw, cleaned extra large shrimp with tails
  • 2 squares Land O Lakes Saute Express Garlic & Herb Seasoned Butter Sauce
  • 2 TBSP salted butter
  • 2 medium zucchini
  • Kosher salt and fresh ground pepper to taste
  • Optional: wedge of seeded lemon
  1. Wash zucchini and cut off both ends parallel to each other to fit snugly onto zoodle maker
  2. Spiral cut both zucchini (no need to peel) into spaghetti-like "noodles."
  3. Place zoodles onto large plate or surface and cover with paper towels to absorb as much water as you can, replacing towels with fresh ones when saturated. To draw out even more lightly salt an let stand until ready to use.
  4. Melt 2 squares of seasoned butter and 2 TBSP regular butter in large wok or pan over medium high heat.
  5. Add shrimp to butter and saute approximately 30 seconds, flip and cook an additional 30 seconds on the second side.
  6. Add zoodles to the shrimp in pan and cook until tender, being sure to rotate both the zoodles and the shrimp for even cooking.
  7. Salt and pepper to taste.
  8. Remove shrimp from pan when pink. The zoodles should finish cooking at the same time. If your shrimp appear to be cooking faster than you'd like be sure to keep them on top of the zoodles to prevent contact with the hot pan to slow cooking.
  9. Serve zoodles as a bed with shrimp artfully arranged on top.
  10. Optional: Serve with a wedge of lemon to squeeze over dish.
