Aren’t these Easter bunnies absolutely adorable?  AND believe it or not LOW carb delicious! 

We were out grocery shopping yesterday and one of the things I bought were some fun filled  new plastic easter egg hunt “eggs”  shaped like cupcakes! Aren’t they cute?  I found them in the Easter candy aisle at my local Walmart. They also have them on Amazon but NO, while I grabbed the picture there (I couldn’t find them on the Walmart site) I did NOT pay $24.95 for these! Are you kidding? I paid something like $5.88!


We celebrate Easter here at my house on Saturday so both my kids can spend Easter Sunday with their in laws. Just the way it’s worked out over the years. Doesn’t make this mom happy but I enjoy them when I can get them! I am sure some of you have the same scenario…?

Anyway I like adding to our easter egg “collection” every year. We have bugs, dinosaurs, animals, etc. that I fill every year and part of our Saturday fun is our Easter egg hunt in the yard! They dig those eggs out every so often throughout the year too! I bet these never stay in the bag for long! What FUN! 

So while I bought regular foil wrapped candies to fill our Easter eggs for the hunt I want to have some sugar-free fun candies here that we can eat guilt free.  Lisa over at Low Carb Yum has a recipe that does just that!  Look at how cute they are! And true to form with all her recipes they are low-carb DELICIOUS!  

The one thing that Lisa says and I agree with is that hers are really big… and thus more carbs than I want in one sitting too. So I am making mine in this cute bunny mold that makes 24 instead of just 12.

If you are quick you may be able to find these at your local Michaels or Walmart! If not they aren’t expensive on Amazon. They have Easter egg shapes too that tempted me! Another tool that is going to make making mine easier is the Wilton “chocolate funnel!” Okay it’s an “Easy Pour Funnel” but I am going to use it for chocolate!  I had no idea (even though I should have) such a thing existed! No more trying to get the chocolate in each mold with a spoon!  Sounds good to me! Who knew? I bet you did!
