One of the most delicious comfort-food desserts is bread pudding. I have made a dupe for New Orleans’ Commander’s Palace Bread Pudding for my friends and family for years. As you can imagine they haven’t had it as much since we starting living a low carb lifestyle. That is until NOW!
I make us low carb cake all the time… usually in the form of what is referred to as muffin in a mug… they are quick and easy as you make them in your microwave. You’ll find lots of those recipes on the site. My favorite is the chocolate salted caramel. I made that on two times last week! I usually top them with a drizzle of sugar-free syrup, sometimes diced berries and more times than not sugar free whipped cream. But sometimes I want real honest to goodness frosting! GREAT friends had us for dinner a few weeks ago and made panna cotta for dessert! OMG it was great! They follow a low-carb lifestyle (albeit not as strict) too but I knew I just had to find a truly low-carb panna cotta to make at home. Turns out it is so simple and can be made so low carb that I will be making it on a regular basis! That makes Michael very happy!
