I had honestly never heard of MIMs before I started eating low-carb almost 4 years ago. Now I don’t know how I did without them! How else can you make a sweet, delicious muffin or cupcake (depending on the ingredients) in about 5 minutes start to finish?  My husband loves it when he sees me getting out the mug, egg, nut flours, flavorings, etc. and my grandkids think they are magical!

We can mix up all sorts of ingredients to suit whomever is eating it… so while I can make a low-carb chocolate one for my husband (they are good size so we normally split one between us) and I we can easily throw in a handful of chocolate ships for the kids in theirs! Topped with some fresh sliced strawberry, low-carb ice cream and whipped cream they make a dessert special enough for guests! Freshly “baked” cupcakes they love, tailored to their own tastes… chips, chopped nuts, etc! I have even been known to rough chop a Russell Stover’s toffee crunch candy and toss it in! YUMMY!  

Let’s get going with this certified low-carb delicious roundup of all sorts of muffin-in-a mug recipes! I guarantee you once you start playing with them you will be mixing it up too!  For this roundup I am going to concentrate on those recipes that I consider dessert. This is a simple, basic muffin-in-a-minute recipe that is great for tweaking! Add ingredients for each person you are serving! Fast and easy!

Serves: 1 muffin
Ingredients
Instructions
  1. Spray the inside of a mug, large coffee cup or silicone cupcake mold lightly with a non-stick spray.
  2. Add butter to mug and microwave until melted.
  3. Measure in all remaining ingredients (making sure egg does not come in contact with the hot butter) and mix thoroughly with a fork just until no lumps remain.
  4. Microwave 2 minutes or until set.
  5. Turn out of mug onto serving plate and garnish as desired.

If this recipe looks familiar it’s probably because you have seen a variation of it in my Lemon Poppyseed recipe!  When making that one I used 1 tablespoon of pure lemon juice and added some poppy seeds:
