I admit it, I am a summer person and I absolutely HATE to see the first day of school! With fall come cooler temps and heartier food. One thing I do love when the wind turns crisp like the leaves on the ground is a great bowl of chili with some delicious cornbread… ALL low carb of COURSE!
Here’s a good recipe on the Fit2Fat2Fit YouTube Channel. He uses all low-fat meats. I would not. I would use “real” pork bacon and ground meat in mine. I would also not hesitate to add a can or two of black soy beans! They add a lot of bulk to fill you up with only ONE net carb per 1/2 cup!

That gives you some “traditional” and some not. Texas chili is not supposed to have beans in it, it’s just how they roll. But you can safely add the black soy beans to any of these recipes and keep it very low carb. Just don’t be adding the beans you normally use or the carbs will quickly go through the roof!
Remember too that you can think to add some of the ingredients that you might use in your “traditional” recipes, like cocoa or other seasonings. Just remember that herbs and spices do contain carbs and figure them in.
If you have a hard time finding the black soy beans locally you can order them from Netrition.com. It’s where I buy my CarbQuik (like BisQuik but low carb) because no one carries it where I live. While I lament the end of summer I do love a great bowl of chili! Especially with friends and family! We’ve even done a good old fashioned chili cookoff! It’s a blast! Pair the chili with some delicious low-carb cornbread and a salad and you have one heck of a party!
