I started out researching shortbread cookies for a roundup I posted last week and quickly realized that biscotti is basically the Italian version of shortbread. Both have that dry, great for dipping into your bulletproof coffee texture we love!

So here’s a whole bunch of great certified low-carb delicious biscotti recipes you are going to love! Stand back and scoop up all your compliments!

Low Carb Biscotti You will LOVE

“Biscotti” is the plural form of biscotto. The word originates from the medieval Latin word biscoctus, meaning “twice-cooked.” It defined oven baked goods that were baked twice, so they were very dry and could be stored for long periods of time.

So have fun and experiment! Just about any of them would be good dipped in or drizzled with chocolate like the shortbread cookies.  I like having sugar-free mini chocolate chips in the house to use in baking. The grandkids use them on their ice cream too! Shhh! Don’t tell them they are eating low carb and sugar free! What they don’t know won’t hurt them!
