By now you have read my post on egg fasts and are looking for some good, certified low-carb egg fast recipes… right?  So here we go!  This is just the start as we will be adding to this great egg-fast roundup as we find new recipes! Have one you think we should include? Be sure to let me know!

Simple Egg-Fast Egg Salad
 
This simple egg salad is quick to whip up and fulfills all the requirements of a simple egg fast diet.
Author:
Ingredients
  • 8 hard-boiled eggs
  • ½ cup full-fat mayonnaise
  • 1 tsp prepared yellow mustard of your choice
  • 1 green (scallion) onion sliced thin
  • Salt, Pepper and (Smoked) Paprika to taste
Instructions
  1. Mix all ingredients and allow time to sit for flavors to meld.
  2. Serve on oopsie rolls (see video below)



Okay, that’s it for now… so I can get this published and you can get to the grocery store to stock up! We’ll be starting an egg fast next week but that can be any week of the year when you want to lose that extra weight you picked up over a holiday, vacation or you just fell off the wagon!  

I will be adding more egg-fast recipes as I find (or you point out) great ones we need to have to continue losing weight while enjoying this way of life!  

Remember to read the article posted earlier on how to transition back to regular low carb after however long you decide to continue your fast to keep as much of the weight off as possible! In the meantime, ciao for now!
