How to Make Amazing Breakfast Egg Cups

...Certified Low-Carb DELICIOUS!

While on vacation at the beach last week I made us some of my infamous ham and egg cups which everyone enjoyed. But sometimes you just want something different in your egg cups and you don’t necessarily have ham in the house to line the cups… so when in doubt, throw lots of stuff together! Like THIS!

You can grab the written recipe on their Facebook page but as you can imagine you can really mix it up and toss whatever you happen to have in the house (and would use in a frittata or omelet) into yours!

I like making mine in silicone baking cups because they pop out so much easier than when I use my muffin pans. They come in a variety of options like 6 or 12 count traditional pans but I happen to have and like the individual ones I bought so I can make just how many I need at any one time. Although you can certainly freeze leftovers to pop into the microwave for a quick and easy breakfast!
