People have the impression that if you are on a low carb diet that you can’t have dessert. That is far from the truth. There are many low-carb desserts being developed and it’s also sometimes simple to adapt existing ones to make them low carb friendly.
Today I happened to notice a trend towards chocolate-peanut butter desserts so I thought I would give you a roundup of some!
Leading the way is Carolyn at “All Day I Dream About Food” with her decadent Dark Chocolate Peanut Butter Layer Cake! OMG who doesn’t go orgasmic simply looking at the gorgeous pictures of her food? Well guess what? They TASTE just as good as they look! That makes Carolyn a very popular blogger as well she should be!
Don’t have that many pans in your kitchen? No worry! Here’s an easy way to split one cake into multiple layers:
Moving on… if you want the flavors but not the fuss of the layer cake then check out these amazing chocolate and peanut butter brownie cupcakes! Again these are from Carolyn. She calls them “bites” as she bakes them in a mini-muffin pan so they are not quite as large as a normal cupcake. The peanut butter frosting has a cream cheese base so it’s just the right combination of sweet and salty! Are you getting the feeling you should be following Carolyn? I agree!
Certainly high on the list for a chocolate peanut butter treat is fudge! This simple and delicious fudge was shared on the low carb diet area of About.com by Laura Dolson and I am sure it will be a hit with your family and friends any time of the year! Why is it we seem to make fudge around Christmas time and not other seasons? This one will have you making it all the time since it has zero net carbs! Can’t beat that! Thanks Laura!
Another chocolate peanut butter treat that I usually associate with the Christmas holidays are sometimes called Buckeyes and are essentially peanut butter balls dipped in chocolate. Shundara has a recipe on her blog that outlines how to make them and keep them low carb! She makes her peanut butter from scratch but you can certainly substitute a low-carb brand purchased at your store or on Netrition.com which has a great variety of low-carb foods not available at most local stores.
Another way to saver both chocolate and peanut butter is in a cookie. Katie Gibson did just that with her Flourless Peanut Butter Chocolate Chip Cookie Recipe. While she does not list net carbs per cookie, and it will be dependent on the brand of peanut butter and type of chocolate you choose, they can certainly be kept very low carb. The trick is going to be stopping at one or two as they are certain to be yummy!
It seems we have covered a wide range of desserts except for pie. How about a tart instead? Actually the filling in Mellissa of “I Breathe I’m Hungry’s” Chocolate Peanut Butter Mousse Tarts is so rich I actually posted the recipe onto my Facebook page saying that I don’t know if I would “bother” with the crust and just serve all that yumminess in a nice custard cup!
