I love watching people on various Facebook groups hypothesize whether or not recipes highlighted on various social media sites can be adapted to low carb. The most recent was spurred by a video and a number of adaptations were discussed by many! It poked at me one too many times and I just had to try…

Low Carb FAIL Cheese Stuffed Zucchini Tots

I am willing to admit failure, and defeat. The picture you see above is the one zucchini tot that turned out “perfect.”  I could hide behind that one and tell you that they all turned out that way but that would be lying! That is the only one out of 8 that looks that nice…. let me show you the rest!

So what did I do and what do I suggest you might try?  I grated my zucchini BUT I suggest you do it HOURS before you intend to use it and make sure you have absorbed as much as possible moisture out of it before ever adding the eggs and flour.  Not sure if it’s dry enough? Get out some paper towels and get even more moisture out of it!

I used coconut flour for it’s “dry” quality, but you may want to try almond flour???  I don’t know, I used coconut!

As for the cheese, I would FREEZE it first next time, if there WAS a next time…. while it tasted (yes, we at the 6 that were quasi-good) okay I don’t know that I would venture down this path again.  

I admit defeat. My cheese-filled zucchini tots were a failure at the end of the day… if YOU can make them turn out as good as Tasty did… and keep it low carb…. PLEASE leave a link to your recipe in your comment below!  I would love to hear from you!
