A facetious post on a low-carb Facebook group this past week prompted lots of unnecessary outrage with comments leaning toward uninformed “NO! You cannot eat cinnamon rolls!” variety.
Well, I don’t want our own #TheLowCarbChallenge private Facebook group to think that such delicious pastries are out of their reach when practicing a low carb way of eating!

We can all use some basic recipes that are easily tweaked to suit our mood or what we find in our pantry or fridge. This basic muffin recipe is just that!
I make us low carb cake all the time… usually in the form of what is referred to as muffin in a mug… they are quick and easy as you make them in your microwave. You’ll find lots of those recipes on the site. My favorite is the chocolate salted caramel. I made that on two times last week! I usually top them with a drizzle of sugar-free syrup, sometimes diced berries and more times than not sugar free whipped cream. But sometimes I want real honest to goodness frosting!
