How to Make Delicious Caprese Chicken Your Family Will LOVE…

... With a Low-Carb Parmesan Pesto Cream Sauce!

This video showed up on my Facebook feed yesterday and it was just the  nudge I needed to actually make this Hasselback Caprese Chicken! I happened to have all the ingredients in the house so I made it last night for my birthday dinner! I made it pretty close to the original recipe (linked below) with a couple easy substitutions.

Thank to Twisted for such an awesome video! You can get their full recipe and directions on their website. In the meantime, here is list of the ingredients they used:

  • 3 large chicken breasts
  • 1 large fresh on-the-vine tomato
  • 1 ball fresh mozzarella
  • 1/2 cup parmesan, freshly grated
  • 3/4 cup heavy cream
  • 1/4 cup fresh pesto
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • salad of your choice, for serving
  • fresh basil leaves




How to Make Delicious Caprese Chicken

 

 

Being true to form I didn’t measure any of the ingredients (didn’t make a difference so go ahead and dive right in!) and of course I never follow a recipe to the letter… so in this instance I used all the ingredients except pepper. I substituted Dean Jacobs Italian Bread Dipping Seasoning instead for a nice blend of Italian herbs and spices. It only seemed fitting for a dish inspired by a Caprese salad!  

The other thing I did was to add both fresh mozzarella and tomato (very thinly sliced to cut the carb count even more) to each of the slits in my chicken breasts instead of every other one. I did this because 1/2 of a breast was more than enough for one person and that way both Michael and I got some cheese and tomato in every bite!

I ladled a bit of the Parmesan pesto cream sauce on top of them when serving and I stored the other breast I made in the remaining sauce for another whole meal! That’s a 9″ x 12″ cake pan in the picture at the top and you can see for yourself how huge they turned out! Certainly enough for 4 servings. So there you have it! Hasselback (fancy name for just cutting slits into your chicken stopping short of the bottom so it holds together and your ingredients don’t leak out!)
